Description

Mediterranean pasta salad combines tender pasta with crisp vegetables, feta cheese, olives, and a bright herb vinaigrette for a fresh and easy side dish.


Ingredients

12 oz rotini or bow tie pasta

1 English cucumber, diced

1 pint cherry tomatoes, halved

1/2 red onion, thinly sliced

2/3 cup kalamata olives, sliced

4 oz feta cheese, crumbled

1/4 cup chopped fresh parsley

1/4 cup extra-virgin olive oil

3 tbsp red wine vinegar

1 tbsp lemon juice

2 garlic cloves, minced

1 tsp dried oregano

1/2 tsp salt

1/4 tsp black pepper


Instructions

1. Bring a large pot of salted water to a boil and cook the pasta until al dente.

2. Drain the pasta and rinse it briefly under cold water until no longer hot.

3. Whisk together the olive oil, red wine vinegar, lemon juice, garlic, oregano, salt, and black pepper in a small bowl.

4. Add the cooled pasta, cucumber, tomatoes, red onion, olives, feta, and parsley to a large bowl.

5. Pour the dressing over the salad and toss until everything is evenly coated.

6. Chill for 20 to 30 minutes before serving for the best flavor.

Notes

Serve chilled.

Store in an airtight container in the refrigerator for up to 3 days.

Add chickpeas if you want a heartier salad.
