- ⅓ cup pure maple syrup

- 1 tablespoon finely grated lemon zest
- 1 teaspoon vanilla extract

- ½ cup fresh raspberries
Blend and Set
- Soak the cashews in hot water for 1 hour.

- Line the bottom of a 7-inch springform pan with parchment paper.
- Add the dates, walnuts, coconut, and salt to a food processor.
- Process until the mixture becomes sticky and crumbly.
- Press the crust firmly into the bottom of the pan.

- Add the cashews, coconut milk, maple syrup, lemon juice, lemon zest, and vanilla to a blender.
- Blend until completely smooth and creamy.
- Scrape down the sides as needed.
- Pour the filling over the chilled crust.
