Description
Smoky chicken ranch pasta salad combines tender pasta with smoked grilled chicken, crisp vegetables, cheddar cheese, and creamy ranch dressing for the ultimate smoky cold side.
Ingredients
12 oz rotini or farfalle pasta
2 cups cooked chicken breast, diced or shredded (smoked or grilled)
1 cup cucumber, diced
1 cup cherry tomatoes, halved
1 cup broccoli florets, chopped small
1/4 cup red onion, diced
4 oz cheddar cheese, cubed
3/4 cup ranch dressing
2 tbsp mayonnaise
1 tbsp fresh dill or parsley, chopped
Salt, to taste
Black pepper, to taste
Instructions
1. Bring large pot of salted water to a boil and cook pasta al dente.
2. Drain pasta and rinse thoroughly under cold water until completely cooled.
3. Add cooled pasta, chicken, cucumber, tomatoes, broccoli, red onion, and cheddar to large bowl.
4. Whisk together ranch dressing, mayonnaise, salt, and pepper.
5. Pour dressing over salad and toss until evenly coated.
6. Cover and chill 30+ minutes before serving.
Notes
Smoked or grilled chicken adds delicious smoky flavor.
Add more ranch before serving if needed.
Store covered in refrigerator up to 3 days.
