Description
Strawberry avocado cold pasta salad combines tender bow tie pasta with fresh strawberries, creamy avocado, baby spinach, and a light balsamic vinaigrette.
Ingredients
12 oz bow tie pasta
2 cups fresh strawberries, sliced
1 large ripe avocado, diced
2 cups baby spinach
1/2 cup red onion, thinly sliced
1/4 cup fresh basil or mint, chopped
1/3 cup extra-virgin olive oil
3 tbsp balsamic vinegar
1 tbsp honey
1 tsp Dijon mustard
1/2 tsp salt
1/4 tsp black pepper
Instructions
1. Bring large pot of salted water to boil and cook bow tie pasta al dente.
2. Drain pasta and rinse thoroughly under cold water until completely cooled.
3. Whisk together olive oil, balsamic vinegar, honey, Dijon mustard, salt, and pepper.
4. Add cooled pasta, strawberries, avocado, spinach, red onion, and basil to large bowl.
5. Gently pour dressing over salad and toss carefully to combine (avocado is delicate).
6. Chill 15-20 minutes before serving.
Notes
Add avocado just before serving to prevent browning.
Use ripe but firm strawberries for best texture.
Store covered in refrigerator up to 2 days.
