Description
Summer berry pasta salad with chicken combines tender pasta, grilled chicken, fresh strawberries, blueberries, spinach, and feta in a light balsamic vinaigrette.
Ingredients
12 oz bow tie or rotini pasta
2 cups cooked chicken breast, diced or shredded
1 cup strawberries, sliced
1 cup blueberries
2 cups baby spinach
1/2 cup feta cheese, crumbled
1/4 cup sliced almonds or pecans, toasted
1/3 cup extra-virgin olive oil
3 tbsp balsamic vinegar
1 tbsp honey
1 tbsp Dijon mustard
1 garlic clove, minced
1/2 tsp salt
1/4 tsp black pepper
Instructions
1. Bring a large pot of salted water to a boil and cook the pasta until al dente.
2. Drain the pasta and rinse under cold water until fully cooled.
3. Whisk together olive oil, balsamic vinegar, honey, Dijon mustard, garlic, salt, and pepper.
4. Add cooled pasta, chicken, strawberries, blueberries, spinach, feta, and nuts to a large bowl.
5. Pour dressing over salad and toss gently to combine.
6. Chill for 20 minutes before serving or serve immediately.
Notes
Use grilled, rotisserie, or poached chicken.
Add berries right before serving if you want them extra fresh.
Store in refrigerator for up to 2 days.
