Description
Tri-color rotini pasta salad with Italian dressing is a bright and easy cold pasta salad made with colorful pasta, crisp vegetables, cheese, and a classic Italian vinaigrette.
Ingredients
12 oz tri-color rotini pasta
1 cup cherry tomatoes, halved
1 cup cucumber, diced
1/2 cup red bell pepper, diced
1/4 cup red onion, thinly sliced
1/2 cup black olives, sliced
1 cup mozzarella pearls
3/4 cup Italian dressing
2 tbsp parsley, chopped
Salt, to taste
Black pepper, to taste
Instructions
1. Cook the tri-color rotini in a large pot of salted water until al dente.
2. Drain and rinse under cold water until fully cooled.
3. In a large bowl, combine the pasta, tomatoes, cucumber, bell pepper, red onion, black olives, and mozzarella.
4. Pour in the Italian dressing and toss until evenly coated.
5. Season with salt and pepper as needed.
6. Add chopped parsley and chill before serving.
