Whole Wheat Light Pasta Salad

Description

A simple and wholesome whole wheat pasta salad packed with fiber-rich ingredients, fresh garden vegetables, and a light lemon-herb vinaigrette.


Ingredients

12 oz whole wheat pasta (penne or rotini)

1 cup yellow squash, diced

1 cup zucchini, diced

1 cup bell pepper, chopped

1/2 cup red onion, finely diced

1/4 cup fresh parsley, chopped

2 tbsp olive oil

2 tbsp lemon juice

1 tsp honey or maple syrup

1/2 tsp dried basil

Salt and black pepper to taste


Instructions

1. Cook the whole wheat pasta according to package directions, drain, and rinse with cold water.

2. In a jar, mix olive oil, lemon juice, honey, dried basil, salt, and pepper.

3. In a large bowl, mix the cooked pasta with squash, zucchini, bell pepper, red onion, and parsley.

4. Drizzle the dressing over the salad and toss well.

5. Allow the salad to chill in the refrigerator for 20 minutes before serving.

Notes

Whole wheat pasta adds a nice nuttiness that pairs perfectly with lemon.

You can lightly steam the zucchini if you prefer it softer.

This is a very light and refreshing side dish.
