Description
Zesty Italian pasta salad with salami and pepperoni is a bold and savory pasta salad packed with deli meats, vegetables, cheese, and tangy Italian dressing.
Ingredients
12 oz rotini pasta
1/2 cup salami, chopped
1/2 cup pepperoni, sliced
1 cup cherry tomatoes, halved
1 cup cucumber, diced
1/2 cup black olives, sliced
1/4 cup red onion, thinly sliced
1 cup mozzarella pearls
3/4 cup zesty Italian dressing
2 tbsp parsley, chopped
Salt, to taste
Black pepper, to taste
Instructions
1. Bring a large pot of salted water to a boil and cook pasta until al dente.
2. Drain and rinse the pasta under cold water until fully cooled.
3. In a large bowl, combine the pasta, salami, pepperoni, cherry tomatoes, cucumber, black olives, red onion, and mozzarella.
4. Pour the zesty Italian dressing over the salad and toss until evenly coated.
5. Taste and season with salt and black pepper if needed.
6. Sprinkle with parsley and chill for at least 30 minutes before serving.
Notes
Use mini pepperoni for easier prep.
This salad is great for picnics and potlucks.
Add pepperoncini for extra tang and heat if desired.
